      I have no experience with an electric smoker. I do believe you are supposed to have e a tray that holds chips and that provides the smoke.

    Making sure i understand. After smoker is at 250F, spritz every hour until 200F internal temp, sauce and smoke at 300F for 15min to firm up sauce?

    Bro... You got the right GRILL (but your not closing it to harness it's true power). You got the "online" Omaha Steaks. You got the SAUCE.     Hey Zach, Have you ever used foil ? Shiny side down, cover entire grate area and run BBQ on high until smoke stops. Everything under the foil turns to ash.... eezy peezy no scrub, just brush ash and season.

      You will use the same method as I use in this video. The type of smoke don’t really matter. As long as you’re smoking to internal temp on the bird.

    I’ve had my pro since they first came out and one of my biggest cons is that the discharge shoot to switch out the pellets is so close to the leg. When I hang my bucket on there to catch the pellets once the bucket starts getting full the pellets will hit the rim of the bucket and be all over the place if I’m not paying attention. I also lost faith in the 4 meat probes that come with it.

    Thanks for the great info on The Rest. I've got a brisket in the smoker now that will be coming out in a couple hours. I'm cooking this one for a friend and he's taking it on a trip to be enjoyed later this week. How should I handle The Rest and cool down process to remain food safe? Thanks again.

      Rest as long as you like as long as you stay over 145. Some people go 12 hrs. After that you will need to let it come down to a cooler temp, and then Refrigerate . If you will not be eating it for a couple days. Reheating a whole smoke brisket will need to be done sous vide.

      I wouldn’t advise it. You have a lot of electronics that can be exposed to moisture from the inside. Proceed with caution

      I believe this was a fat cap down brisket. I’ve done them both ways in the vertical and get good results both ways. You will get a better smoke ring with fat cap down

    Just subbed, I have this exact same grill lol. When smoking a brisket or ribs do we do the snake method and place the meat on top of the cast iron grates. Or the hanging steel ones higher up?

      Either one will work. You will have less risk on the top rack

    Hey so I picked the same smoker up recently and I did 2 pork butts and after they were done I went to clean the pit. Just to find all my grease went everywhere but the grease pan. I did watch ur one video about the tube came apart but mines still connected. So wondering ur thoughts.

      You may have your grease catch tray in backwards. There is a spacer on the backside that looks just like a handle. It’s not. It f that spacer is facing forward the grease will run through the air vents and into your lower chamber.

    so fill the water pan 3/4 then cover the water pan completely? just asking seems it will restrict water evaporation. was just clarifying...thanks! love the content.
